About the Recipe
These fritters make a great breakfast, snack or lunch box addition. If you have an airfryer, batch cooking them is super easy and they store in the fridge for 2-3 days.
Ingredients
3 Zucchinis, grated
1/2 tsp Salt
1 Red Onion, finely chopped
1/2 cup Flour (Buckwheat, spelt, wholemeal plain)
3 Eggs, lightly whickes
75mg Feta Cheese Crumbled
Oil, for frying (Olive, coconut)
For serving
Tzatziki
Lemon wedges
Preparation
In a bowl mix the salt through grated zuchinni, and let sit for 10 minutes. Place in a clean tea towel and squeeze out excess fluid. Place the drained zucchini in a bowl, with onion, flour, eggs, feta and season with pepper to taste and mix well.
Heat a pan with a dash of olive oil, and place golf ball size fritters flattened in the pan, and cook until golden on both sides and cook through. (alternatively, lightly fry in a pan and finish in the airfryer for 6 mins).
Serve with a lemon wedge and a dollop of tzatziki, enjoy!
